Patience is a virtue as we’ve learned producing our first sparkling wines. After four years since harvest we are proud to release our two inaugural sparkling wines made in the Champagne method. 2015 Sweetwater Springs Vineyard Blanc de Blancs is delicate platinum color with fine energetic bubbles. Inspired by our visits to the chalky caves of the Champagne region, we chose to age this wine for 40 months in bottle on its less to create a rich and complex palate. The wine is expressive with honeysuckle, Gravenstein apple, and marzipan aromas. On the palate the vivacious bubbles encapsulate flavors of asian pear, lemon meringue, and apple blossom, highlighting the beauty of the Chardonnay grape. With crystalline acidity and focused purity, this blanc de blancs can be enjoyed now or cellared for an additional five to ten years.
